Jared Hirsch
Colibri, San Francisco
Sidebar, Oakland
Jared comes to bartending after 23 years as a working performer, designer, stagehand, and production manager in the American Regional Theater—having worked on some of the most inspiring and entertaining public performances this side of the pond. He has taken his love of artistry, craft and performance and turned them into a more individualistic show behind the bar.
Currently behind the stick at classic cocktail haunt and Mediterranean bistro, Sidebar in Oakland, as well as tequila bar and Mexico City bistro, Colibri in San Francisco, he is both student and innovator in the cocktailian arts. Under his mantra of responsible hedonism he brings a passion for artisan spirits, culinary derived cocktail ingredients, and a joie de vivre to his craft of creating the tastiest and loveliest drinks to entertain his guests’ myriad senses.
When not behind the bar, Jared is out helping to organize public acts of wonder, like the annual Bring Your Own Big Wheel rally, SantaCon, BalsaMan, PeepShowMiniGolf, and his own RadicalSparkle (re)Wedding.
